How To Make Hemp Seed Pesto | Tony Horton Fitness

Hey guys and gals! I’m back in the kitchen again with my good pal, Peter CapozziI. This time, we’re throwing together a delicious, healthy and fast Hemp Seed Pesto. It’s delicious and even healthier than the traditional Pesto. What’s more, it’s vegan! We’ll be replacing the cheese with Hemp Seeds instead.

INGREDIENTS:
Makes 2 cups
2 medium cloves of garlic
1/2 cup hemp seeds
3 tablespoons pine nuts
1/2 teaspoon salt
1/4 teaspoon freshly grated lemon zest
2 tablespoons freshly squeezed lemon juice
2 1/2 cups loosely packed basil leaves, stems removed, washed and dried
1/2 cup extra-virgin olive oil

Add the garlic, hemp seeds, pine nuts, salt, and lemon zest into the bowl of a food processor fitted with the steel blade, and process briefly, about 20 seconds or so, until chopped and combined but still retaining a course texture. Then, add the basil and lemon juice, and with the motor running, slowly pour the olive oil through the feed tube. Let the processor run until the pesto is relatively smooth and combined but some of the hemp seed coarseness still remains. Taste for seasoning and add a little more salt if you’d like.
